What To Do With The Figs?

I’m thinking, those of you that picked up a Bountiful Basket today may want a recipe. I found this one on Foodnetwork, it’s created by Emeril.

I plan to substitute the Baby Arugula in Emeril’s recipe with the spinach and lettuce we got in our Bountiful Basket. I think the fig dressing sounds yummy!

I cut Emeril’s recipe in half. It seems like more than enough to me.

  • 1 tablespoons butter
  • 1 cup chopped fresh figs, plus 2 fresh figs, quartered
  • 3/8 cup sugar
  • 3/8 cup cider vinegar
  • 1 cup vegetable oil
  • Salt
  • Freshly ground black pepper

In a saute pan, brown the butter with 1 cup of the figs and the sugar. Season the mixture with salt and pepper. Remove from the heat and pour into a food processor with a metal blade. Puree the mixture for 1 minute. Add the vinegar and process for 30 seconds. With the machine running, slowly add the vegetable oil until the dressing is emulsified. Season the dressing with salt and pepper. Fold in the reserved figs. Pour the dressing into a saucepan and warm the dressing.

GO HERE to see Emeril’s full recipe. It has 5 stars. Bountiful Basket’s has some fig recipes on their recipe Facebook page too. Now if I can just keep myself from eating them all  before they make it into the dressing. :D
